MEESO will identify and develop products for the human food chain from on board and on shore processing. This includes evaluating the potential of the species for biotechnological applications.

Food safety aspects and condition and quality of the organisms in the catch and subsequently the processed products will be examined by determining an array of parameters. The biochemical, chemical and process analyzes will guide the processing parameters for product development with the aim of creating food, feed or biotechnological products.

SINTEF Ocean have, and have had projects on mesopelagic species, such as MEESO and SUMMER. The work has included, among other things, analysis on chemical composition of different mesopelagic species, and the results have been interesting! The colours achieved during the analyzes, indicated a great potential for very colourful products!
